Camping recipes
1 7-ounce tub of duck pate
2-3 shallots, peeled and finely chopped
8 small waxy potatoes, cooked and sliced
Shot of hot sauce (optional)
Cook's notes: This is a good reason to throw some cooked, sliced potatoes into your cooler. If you're not a pate person, consider subbing a half-pound of chopped corned beef and 2 tablespoons oil. A little fruit goes well with duck. Place a few halved plums into the pan after you've removed the hash, and brown them on both sides.
Equipment note: You'll need a gas camp stove, frying pan and spatula.
Cooking: Melt the duck pat in a large nonstick frying pan over medium heat, then add the shallots and potatoes and cook for about 20 minutes until golden and crispy. Turn them frequently, and season with hot sauce, if desired.

Hot Dog Goulash
Makes 4 servings
4-5 strips uncooked bacon, chopped
3 large onions, peeled, halved and sliced
8 medium new potatoes, scrubbed or peeled
12 hot dogs
2 bay leaves
sea salt and black pepper
1 mug chicken stock
Equipment note: You'll need a stove or tripod, and a saucepan or pot big enough to hold everything.
Frying: Heat a large saucepan or pot over medium heat, add the chopped bacon and cook in its own fat until golden. Add the onions and continue to cook, stirring frequently, until caramelized. Add the potatoes, hot dogs, bay leaves and some seasoning. Gently mix.
Simmering: Pour in the chicken stock and gently simmer, covered, for 30-45 minutes, or until the potatoes are tender and sitting in a rich gravy. But keep an eye on it toward the end of the cooking to make sure it doesn't get too dry.

A Kind of Baba Ghanoush
Makes 4 servings
4 eggplants
3 tomatoes, preferably homegrown
3 tablespoons Camping Marinade (see seasoning note)
1 teaspoon Bell's Middle Eastern Spice Blend (optional) (see cook's notes)
Sea salt
Extra-virgin olive oil
Handful of coarsely chopped, fresh flatleaf parsley
Cook's notes: The eggplant will take about 45 minutes to cook. Pair this dish with grilled, spicy sausages and warm bread.
